Chicken, Pesto, and Orzo Soup
I made one last soup for the season and wow! This was such a delicious one! Even my non-soup eater enjoyed it and had leftovers of it willingly the next day. It was such a nice easy recipe to throw together too.
Ingredients:
1 1/2 lbs. chicken breast cut into bite sized pieces
1 -24 ounce jar spaghetti sauce
6 cups broth (I used chicken)
1/2 cup basil pesto
1 tomato; diced
1/2 pepper; minced
1/2 onion minced
1 cup kale (I used frozen but fresh would work too; just chop it fine)
2 cups whole wheat orzo
First I cooked the chicken in a pan.

DeleteI love anything with basil pesto in it - this looks delicious! I"m hoping to make my own pesto this year if I can stay on top of the garden basil instead of letting it go to seed when it gets hot again.
ReplyDeleteI LOVE homemade pesto! I plan to grow my own basil again this year too; it's one of the few plants that I tend to do pretty well with.
