Chicken, Pesto, and Orzo Soup

 I made one last soup for the season and wow! This was such a delicious one! Even my non-soup eater enjoyed it and had leftovers of it willingly the next day. It was such a nice easy recipe to throw together too.



Ingredients:

1 1/2 lbs. chicken breast cut into bite sized pieces

1 -24 ounce jar spaghetti sauce

6 cups broth (I used chicken)

1/2 cup basil pesto

1 tomato; diced

1/2 pepper; minced

1/2 onion minced

1 cup kale (I used frozen but fresh would work too; just chop it fine)

2 cups whole wheat orzo


First I cooked the chicken in a pan.


While the chicken was cooking I added the sauce, broth, pesto and veggies to my crock pot. 


I added in the chicken and turned the crock pot on low to simmer for the day. An hour before serving I added in the orzo and let it cook. It thickens up the soup nicely. 


I was really surprised that even my non soup eaters gobbled this soup right up. It was so flavorful! 



We only had a couple of servings left for lunches the next day!

  4. I love anything with basil pesto in it - this looks delicious! I"m hoping to make my own pesto this year if I can stay on top of the garden basil instead of letting it go to seed when it gets hot again.

    1. I LOVE homemade pesto! I plan to grow my own basil again this year too; it's one of the few plants that I tend to do pretty well with.

  6. WOW! This dish looks so yummy! I love orzo and while my hubby is gluten free, I've learned to make the base soup and then add any gluten after I've dished up my portion. Thanks for the inspiration!
