Weigh- In Wednesday: Tofu Nuggets

After rejoining Weight Watchers, I knew I wanted to reinstate my Weigh- In Wednesdays posts. On the third Wednesday of every month I'll have a new post/party up for everyone to share workout tips, weight loss thoughts and ideas, and healthy recipes to fuel us on our journey to better health. 


This month I thought I'd share a recipe I've been playing with for a few months now. I saw a few recipes about making nuggets using tofu and I was intrigued. I like tofu but I can't say it's a favorite food of mine so I'm still experimenting and playing with different recipes that use it. 

This was is actually really simple and only takes 2 or 3 ingredients depending on how much time you want to give it: Tofu, (sometimes beaten eggs), and bread crumbs of your choosing. If your breadcrumbs are plain you are going to want some seasonings too! 

I like to make my own breadcrumbs from either homemade bread or a few specific very low processed brans I'll buy but really any bread or panko crumbs you use would work. 

I use the extra firm tofu, drain it, wrap in some paper towels and squeeze as much liquid out as I can. 
Then I dice the tofu into bite sized chunks. 


If I'm feeling more "fussy" I'll dunk the tofu in some beaten egg to help the breadcrumbs stick but this particular day I just tossed them in a bag with some seasoned breadcrumbs and then laid them out in a single layer on my pan. 


I cook them in the air fryer at 400 for 12 minutes until they are a nice toasty brown. 


I love them served warm over my salad.


As you can tell the chunks in the above photos have way more breadcrumbs; that's because I did dunk that batch in the eggs but I honestly thought it was TOO much bread for me.

  1. I have not eaten tofu! My youngest has been eating it this year in college. She's very picky about chicken- she likes it, but it has to be prepared exactly how she likes it to be prepared. Since that's not always possible, she sometimes foregoes chicken altogether and chooses tofu instead.

  3. One of my kids really likes tofu and is dabbling with vegetarian meals. I like it in pad thai and a few other things i have tried. This looks really good!

    1. I haven't tried it in pad thai but we've used it in stir-fries before. My mother in law was saying she found a recipe for using tofu to make cottage "cheese" that she thought turned out great (and she really does not like tofu).

    1. I like a salad/protein lunch so I can do less cooking. I feel like I spent the vast majority of my time cooking and prepping food.

  8. Tofu is actually my food nemesis and probably the one food that I can't/won't eat. That said, I was reading through your post and thinking that these crispy tofu chunks actually look and sound really delicious. I wonder if this could be the tofu recipe that turns me... I'll let you know if I try! :)

    1. Could be... I know it can be a tricky food for most people since it does have such a weird texture and very little taste on it's own.

  12. We used to eat toful all the time when my daughter went through her vegan stage. We haven't had it in a long time, but I did enjoy it. Might have to try this recipe and give it a go again!

    I miss eating tofu. Hopefully Rob will be able to include it again soon. One of my faves was making it into a yogurt by blending it with some honey and lemon.

    1. Oh that sounds good; my mother in law was saying she tried a recipe last week that used tofu to make a cottage cheese of sorts and she thought that was good too (and she doesn't usually like tofu) so I'm anxious to try that as well.

  14. Hi Joanne, I think I tasted tofu once and it was so bland and not enjoyable so I haven't really had it since. I have heard though that it's best treated as like a sponge that soaks up sauces and flavours. I'll have to try it again as I know it's meant to be a good source of protein and has lots of nutrients!   15. Years ago, I experimented with it, but nobody in my family would eat it. I don't own an air fryer, but I'm so tempted to get one after seeing so many recipes on yours and other blogs.

    1. It's essentially a countertop convection oven; most air fryer recipes can be cooked in a convection oven too. I just tend to run out of stove/oven space since I'm often cooking something completely different for myself.
