Recipes We've Been Making This Fall & Winter

 It's been 4 months or so since my last "recipes we've been making" lately post and I have a really wide variety of recipes to share this time around. 


We made these taco turkey meatballs with rice and corn on the cob one night and they were a huge hit with my boys. 


I tired my hand at making my own cranberry sauce this past Thanksgiving and I followed this easy crock pot recipe. I poured mine into 6 individual serving cups when I was done and I was really afraid I might have overcooked it since I forgot about it and left it simmering an extra hour! But I still thought it was pretty good.


We made this cherry tomato and basil pasta for Alec's birthday dinner. I did add 1/2 cup or so of red cooking wine and we swapped out the angel hair for whole grain spaghetti. We thought it was delicious and oh so easy!


We were really running low on groceries one night and I did a google search with the ingredients I had on hand and came up with this chicken penne pasta meal. The only change I made was to add some frozen chopping kale to it. It was a quick, easy, and delicious meal!


We tried this chicken marinade for dinner one night and it was really yummy. I try to let our chicken marinade most of the day so it's nice and flavorful.


We made these Hasselback potatoes and they were delicious! (for once I even followed the recipe!).


I made these Valentine's Day Cookies to put in Alec's care package for February and they were a huge hit with the whole family (and dorm from what I understand). I did swap out the chocolate chips for white chocolate chips like one of the variations suggests.


With that 1/2 cow we bought last year we have been having lots of pot roast and while I love our recipe I wanted to try something new so we tried this classic pot roast recipe with a few tweaks. I put the seasoning on; added the roast to the crock pot then added in the onion, garlic, beef broth, wine, mustard and coconut aminos (since I was out of Worcestershire sauce) then let it cook on low all day. I omitted all other veggies, the fresh herbs, oil. and salt and it was still quite yummy.


I made some of these heart sugar cookies with Nutella filling to add to Alec's care package. The only thing I did differently was omit the heart/hole in the middle of the top layer. I thought they'd transport and mail better that way. 


I made these Best Rolls Ever to go with some soup I was making. They really were delicious and oh so easy to make!


After listening to Good Energy, I cooked up this almond flour keto bread that Casey recommends. It wasn't bad and is completely gluten free. 


I was searching for a different carbonara recipe and found this one-- I omitted the bacon and added parsley in place of the chives. It was delicious! The boys ate theirs plain and my husband and I added some sauteed shrimp.

  2. These all look pretty tasty! I sometimes forget how many options there are for using pasta, and get stuck in a mac 'n cheese rut. I'd like to try these ideas.

  8. Those potatoes look so good! I haven't been cooking all that much. I tend to pick quick and easy meals that I can stretch to two dinners. Pasta is great for that!

    1. Thank you! I like to have a record of recipes here on the blog so whenever one of the boys or my husbands reminds me of a new recipe we once tried (and forgot about!) I can look it up to make it the same way.

  13. I've never made Hassleback potatoes but they look marvelous and I might have to give it a try. Still kicking myself I didn't buy extra cranberries at the holiday. I tried after but everyone was out.

    1. We loved it! It's a tricky to meal to make though because you don't want the eggs to cook much and resemble scrambled eggs in your pasta.
