Weigh- In Wednesday: My Favorite Granola Recipe

My absolute favorite is this recipe for oil-free granola from Plant Based School; however, I never seem to make it exactly the same way twice. Typically we make our granola and then my younger two boys get me to add some chocolate chips to it. BUT I felt like there had to be a healthier option for getting that chocolaty taste without adding even MORE sugar to our granola (because I do feel like this plant based recipe has quite a lot with the maple syrup in it). So I began experimenting and came up with our new favorite granola recipe!
It makes a LOT; we typically fill up a gallon sized Ziploc bag and I measured it to make 40 servings. But you can easily halve the recipe and make less and/or store it in the freezer for up to 3 months.
Ingredients:
4 cups old fashioned oats
1 cup slivered almonds
1 cup pecans pieces
2 Tablespoons each: pumpkin seeds, chia seeds, and flax seeds
1 cup coconut flakes (unsweetened)
1 cup tahini
1 cup pure maple syrup
2 Tablespoons cinnamon
5 Tablespoons cocoa powder
2 teaspoons vanilla extract
Homemade granola is the best! Your recipe looks really good. As for chocolate, there are several no sugar or low sugar chocolate chips if you want the taste and feel of chips in your granola without the typical sugar/fat amount of regular chips.

DeleteThat looks really good but I don't do nuts. That's good for the WW points side of things. Lol. But, nuts are very good for you.

You can easily omit the nuts; I happen to love them! I am very excited but skeptical about the new plan since I know zero point potatoes are going to be very hard for me to control! LOL.... and I know from experience that overeating zero point foods can lead to weight gain.

ReplyDeleteI think so too; and cheaper too it seems like. I'm trying to get my husband to just let me make his granola too but he thinks mine has too much cinnamon which he's not a fan of..

ReplyDeleteNot a silly question at all; I had to Google it while in the store to get some suggestions on where to look! I have found it near the peanut butter in one store and the other store keeps tahini with the mustard/ketchup/condiments. If you have a large international food section you might find it with middle eastern/Mediterranean section (our stores don't have that).

DeleteDelicious. You know I love your yogurt/granola/fruit breakfasts!! Have started eating them myself almost every morning. Thank you for this scrumptious sounding recipe for granola. Not sure what tahini is. Off to find out!!
