Ritzy- Parmesan Chicken Fingers

 I wanted something quick and easy for dinner one night earlier this month and thought I'd just make some homemade chicken fingers and French fries. It's something we have perhaps once a month or so and I really don't even use a recipe most nights. But this particular night I realized I had no breadcrumbs (I typically keep fresh breadcrumbs made from leftover bread/crusts in our freezer). I didn't have any breadcrumbs or panko crumbs in the pantry either so I started poking around to see what I could find. 

I saw that we had a box of Ritz crackers and figured that would work! So I set to work.. 



Ingredients:

10 chicken tenderloins

1/2 cup flour

1/2 cup milk

2 sleeves Ritz crackers; crushed

1/2 cup shredded parmesan cheese

1 tsp. garlic powder

1 tsp. Italian seasonings

1/2 tsp. rosemary 


Step 1: I like to make a little assembly line with the flour in one dish, the milk in another and then I combine the Ritz, cheese, & seasoning altogether in a Ziploc bag. I prep my cookie/baking sheet with some foil or parchment paper and preheat the oven to 400 degrees.

Step 2: Coat the chicken in the flour, then the milk and then into the bag to coat with the seasonings. I lay them out on my baking sheet until all pieces are coated. 

Step 3: Cook for 15-20 minutes until an instant read thermometer says the internal temperature has reached 165. 



For this particular dinner I made butternut squash fries and heated up some peas to go with our chicken.
My boys won't eat the squash fries though so I made them regular fries instead.


It was delicious and I was asked if I remembered to write down the recipe since everyone loved it!

  10. That's a very smart substitution! My mom used to crush up corn flakes. Just make sure not to use the frosted variety! I try to keep an extra breadcrumb package in the pantry. It just goes on my grocery list when I run out of it.
