Sausage & Spinach Tortellini

 I made a meal a few months back when Alec was not going to be home and I just sort threw a bit of this and that in a pan and added some leftover past we had on hand. Well, my guys liked it so much they asked me to make it again and more of it! 


Now this recipe makes 12 servings (according to the tortellini packages!); my family really loves leftovers for breakfast and lunch so I try to make most pasta meals stretch. But in all honesty my guys are big eaters and this recipe made about 6 or 7 servings for them. 

Ingredients:

1 package sweet Italian sausage links; sliced

1 onion, diced

2 tsp. minced garlic

1 cup sliced carrots

1 cup beef broth

1 jar spaghetti sauce

2 packages (13 ounces total) tortellini; cooked and drained

1 large handful of fresh spinach (or about a cup of frozen spinach)

1 cup heavy cream


Sautee sausage, onion, garlic, and carrot slices in a large pan until sausage is cooked through and veggies are fork tender. 


Add in broth and spaghetti sauce and simmer (if using frozen spinach add it now).


Meanwhile in separate pan cook the tortellini according to package directions and drain. 

Add spinach and heavy cream to sauce and sausage just cooking for a few minutes to heat both of them through. Pour over pasta and mix together.




I immediately packaged up a few meals for lunches the next day (otherwise I've learned there might not be any leftovers).  I was told it heats up real well the next day too and isn't at all dry.
