Weigh- in Wednesdays: My Favorite HEALTHY Foods I've been eating all summer
In all honesty I ate a lot of junk this summer. Between what felt like weekly ice cream treats and all the summer cookouts, parties, and vacations where I ate burgers and fries and other not healthy foods there were many times when I just craved healthy eating.
I made sure that after each of our vacations I buckled down and ate lots of fruits, veggies, zero point meals and cut sugar back out of my diet.
I must have done pretty good because in June when summer started I weighed in at 164.2 and by the time we arrived home from Disney at the end of August I weighed in at 162.8!
My favorite healthy eating meals/snacks include:
fresh fruit, non-fat Greek yogurt, and 1/4 cup granola -- 3 point meal or snack |
Lots of fresh veggies, my 2-ingredient bagels and a smear of fat free cottage cheese- Just 3 total points |
fresh veggies, sliced fruit and rolled deli meat (usually turkey or chicken but ham works in a pinch) |
One of my favorite breakfasts is my crustless quiche with lots of cooked veggies and a bit of sliced ham. Just 3 points for a whole plate of food! |
Salad with croutons and dressing (2 points) and a turkey sandwich (made with my 647 bread and light mayo-- 3 points!) with fresh fruit. |
I have been buying bagged salad kits on occasion and adding some pre-cooked chicken slices to it. Points value vary but I try to keep my meal under 5. |
This pasta primavera is just 2 points for the parm. cheese and oh so filling. |
Looking back through my weight watcher's app at my weight tracking I realized that I have maintained my weight (with slight fluctuations from 162-164ish) for nearly a year now. I'm content with that.
Of course I'd love to get back down to my personal goal weight rage of 150-155 which I did reach in 2020 and I'm working hard to incorporate daily exercise and weight lifting as well as hiking to help me reach that goal.
I'm trying really hard to stick to my personal points plan and log in all the food I eat each day but I'll admit I'm not always the best with that! I try to give myself grace and just do my best.

DeleteThe food in your pictures looks really good. I wish I liked yogurt and cottage cheese. Speaking of yogurt, the only time I've used yogurt as a main ingredient in something I've planned to eat is when I make two ingredient bagels. You mentioned the latter in your post. Is yours made with Greek yogurt? That is one of the ingredients in mine. Those bagels are so good which reminds me I should make them soon. Good job on staying consistent and disciplined while still enjoying life's fun moments with family and friends that entail eating yummy comfort food.
ReplyDeleteYep, non-fat Greek yogurt with self-rising flour. I don't really make mine into bagel shape though as I struggle to get that hole to stay put so mine are more like 2 - ingredient biscuits! LOL.

ReplyDeleteI just hate that it often feels like a constant struggle and something that I never stop thinking about.. because the minute I do I slop back into old bad habits. Why are the bad habits so much harder to break than the new good ones I'm trying to establish?!

Thank you! I was really surprised to see the scale go down after Disney; I can only assume it was all the walking and that ungodly heat we're not really used to.

You did really well...I am on my own weight loss journey for the last almost 4 months....I have lost 22 pounds so far with a goal of 5 pounds a month....It is not easy as I have Hashimoto's Thyroiditis which makes it almost impossible to lose weight....I am exercising, doing Intermittent Fasting and Calorie Counting...I will be posting about it soon... Great job on maintaining your weight for a year....

DeleteGrace is seriously the best thing to help us. Otherwise we get frustrated and go off the deep end (at least I do). And I think you need those treats at times.

DeleteI do (light!) weightlifting 3 days a week and I try to make sure I have lots of protein and whole grain carbs for dinner.

ReplyDeleteI use Barilla Whole Grain pasta. On WW it's zero points and my kids happily eat it with zero complaints. They swear they can not taste the difference between that and regular pasta.
