What's Up Wednesday: August 2022

Now that all of our summer vacations are over and the older two boys started back up to school I'm trying to get back to my regular blogging schedule.  I love these What's Up Wednesday posts!  It's such a fun way to look back on our months.

What We're Eating This Week:
We just got home from Disney/ Universal so we're eating lots of veggies, chicken, and fish this week.  I'm planning for lots of low points foods and meals.

Saturday: New England style baked haddock with roasted potatoes and green beans. (The younger boys had grilled chicken in place of fish)

Sunday: Rainbow veggies with pasta (the boys had plain pasta with sauce)

Tuesday: Chicken tenderloins with rice and steamed broccoli

Wednesday: Chicken noodle soup with homemade bread

Thursday: Stuffed acorn squash (the boys will be on their own for dinner)

Friday: Tacos and taco salad

What I'm Reminiscing About: Our very early days of homeschooling!  This time of year as we get ready to start school I often think back to those first few years homeschooling and how relaxed we were about our days.

What I'm Loving: Just before vacation my nails were so long and I was having the best time decorating them with nail wraps (which seem to let my nails grow even longer!). This glitter French manicure was one of my favorites!

What We've Been Up To:  Our heatwave finally broke so we spent lots of time hiking the first two weeks of August.  We also celebrated my mother in law's birthday with a big family party at the lake. We finished off our month with a trip to Disney and Universal (which I've already started re-capping on the blog earlier this week!).

What I'm Dreading:  Nothing at the moment!

What I'm Working On: Finishing up some blog posts about our vacation as well as culling through all the photos to get them ordered for scrapbooking this fall.

What I'm Excited About: I'm starting to get a bit excited for fall and the start of the new school year with Evan (we'll start homeschooling after labor day).

What I'm Watching/Reading: I started watching Bones (Hulu), my husband and I are really enjoying The Americans (Hulu), I rented Downton Abbey: A New Era (Prime) and loved it, I also watched an old movie called The Jones (Hulu) that wasn't bad, Celebrity Family Feud (Hulu), Turning Red (Disney+), Ratatouille (Disney+), Indiana Jones and the Crystal Skull (found on TV in the hotel room)

I read lots of books this month and bought 4 more to bring with me on vacation (even knowing I probably wouldn't have time to read them all!).

What I'm Listening to: Bones; I find myself bingeing this show as I read/type blog posts.

What I'm Wearing: Cooler mornings mean I'm reaching more and more for my pants.

What I'm Doing This Weekend: I don't think we're doing anything this weekend but I am looking forward to the long Labor Day weekend.

What I'm Looking Forward to Next Month: Celebrating Evan's birthday and the return to a more structured routine as well as starting up with our hiking group on weekly hikes every Friday.

What Else is New: Nothing that I can think of.
