Recipes We've Been Trying Lately: Soups, desserts, and more

 It has been so long since I've shared some of the new recipes we've been trying out!  Last year I had begun a series called "Recipes We've Been Trying Lately" that showcased the various recipes from around the web that we decided to try.  I have referred back to my own posts many times when trying to recreate a recipe we all enjoyed. 

I realized I hadn't shared a round up since the end of Summer!  I'm really hoping to make this a seasonal thing.  But for now let's just pretend that end of summer was "lately." 



1.  We had a ribeye roast in our freezer that I really needed to cook up but never having made one before I was a bit intimidated.  This recipe for a ribeye roast by Healthy Recipes made it so easy and the roast was cooked perfectly.  

2. My husband went fishing and came home with 4 lbs. of fresh blue fish.  Never having had blue fish we scoured the internet for a recipe that promised great results.  The Super Summer Grilled Bluefish recipe was a huge hit. The citrus flavor took away any of that fishiness and we had a delicious fresh fish dinner. 


3. Evan requested  These Mint Chip brownie Ice Cream Squares for his birthday. It was amazing!


4. I'm always looking for new ways to prepare pork since it's not my favorite meat and this recipe for crock pot pizza pork chops was amazing!  We now make this a minimum of once a month; often omitting the onion and it still tastes great and makes the pork so unbelievably tender too. 


5. We made these amazing Turkey/Apple meatballs.  We cooked them on low all day in the crock pot with BBQ sauce and served them over rice.  They were a perfect fall treat with fresh apple orchard apples but I really wish I had not cooked them with the BBQ sauce as the flavor of the sauce completely overpowered the meatballs and they had smelled SO good while I was cooking them up.  The next time I turned them into a meatloaf with no sauce on top and it tasted great! 


6. Alec really wanted to try making these apple pie cookies to see if it was something that would work well for his class at school to sell in the bakery.  They were messy but oh so delicious! 



7.  We had tons of frosting left from Evan's birthday cake and whipped up a batch of frosting cookies.  They were a huge hit with the family.  Even if you don't make these cookies I highly recommend you read her post about using leftover frosting-- it is bound to make you chuckle! 


8.  I made this teriyaki pulled pork in our crock pot and it was a huge hit! I did have to modify it slightly for what I had on hand (no sherry so I added extra pineapple juice and I had to omit the ginger & sesame seeds altogether).  But it was still quite tasty! We made pulled pork rice bowls with it and the whole family liked it. 

9. We made this slow cooker creamy chicken and corn soup by Sweet Savory and Steph.  I did change it just a bit; I cut the 1/2 and 1/2 back to just a 1/2 cup and omitted the cream cheese altogether.  It was really good and flavorful but I think I would have loved it even more without the cream and just left it a chicken broth soup. 


10. We had this unstuffed cabbage roll soup one night; I did make it more WW friendly using ground turkey and chicken broth but it was so tasty! We'll definitely be making it again.

 


11.  We paired our soup with this ciabatta Italian bread recipe.  I did substitute 2 cups of all purpose flour and 2 cups whole wheat flour for the bread flour but it turned out great and made 4 small loaves so we had some leftovers for once. 


12. We tried this easy one pot chicken parmesan that was both easy and tasty and I have a few other recipes from Steph I want to try this month.  Best of all with whole wheat pasta this was only 1 point per serving on my WW plan and the servings were good sized too! 


13.  We also tried this delicious chicken cacciatore recipe from Sweet Savory & Steph (though I ended up changing so much of it that I will be writing up a separate post of my own soon).  I did keep most of the "sauce" the same and it was delicious!  Unfortunately, the day I went to actually make the recipe I realized that I had used many of the ingredients needed in other dishes and pretty much had to make up most of what I did on the spot.

  5. I really want to try the ribeye roast! Think it would be a hit with my husband and son! The mint ice cream brownies look delicious!! And I can imagine those apple pie cookies would taste heavenly eaten warm with vanilla ice on the side!

    1. That is a family favorite for sure; I've made it twice now-- once with chicken broth and once with beef broth and both were very tasty.

    1. I love watching him in the kitchen. I'm hopeful he'll take over more of the cooking next year as he enters that part of his schooling but I know he prefers the bakery and making breads/desserts best.
