Recipes We've Been Making Lately

 It's been 2 months since I have shared a round up of the new and different recipes we've found around the web that looked too good to pass up.  I like to keep a record of what we've made and make note of any of the changes I might have made while trying out the recipe just to keep for my own personal reference.  We often find that some of the "new" recipes we try become tried and true family favorites in no time.  



1.  This Weight Watcher's Tuscan Chicken Pasta is a new family favorite! The only problem I had was that I had to keep adding chicken broth to keep the pasta from sticking to the pan and cooking properly but that was minor. 


2. We tried some grilled romaine to go with our steak and it was really quite tasty!  I was surprised at how much I enjoyed it.


3. New England style baked scallops were so easy and delicious to make; though I didn't have vermouth and just omitted that from the recipe they still came out perfect. 


4. Lemony apple coleslaw-- I am not usually a fan of slaw but thought this was great with the crunch of the apples and the lighter lemon dressing.  Apparently I was the only one though as I seemed to be the only one eating the leftovers and only my husband and oldest son even tried it at dinner. 


5. Alec made these chocolate filled croissants; they were amazing! He used the same croissant recipe he's been perfecting since Christmas and added a rectangle of Hershey's bar inside each one.  


6.  Alec made this frozen Oreo dessert for his party in August and it was such a huge hit with one of his friends that she asked to bring a piece home for her sister!  It was delicious and so easy to make (we doubled the recipe to make a 13x9 pan size dessert for a crowd).


7. At  the very last minute I made some delicious s'mores cookie bars for my sister's impromptu going away party.  They were a huge hit even though I had to substitute actual mini marshmallows for the Fluff the recipe called for.  


8. August was such an unhealthy month for us!  We also made this amazing espresso cheesecake for my mother in law's birthday.  It came out perfect and tasted amazing.

  4. That espresso cheesecake sounds and looks delicious! And so do the other recipes minus the scallops. My kids are allergic to shellfish so the only seafood we eat is fish. (Luckily they love fish!!) Have to try the grilled Romaine Lettice. Think we'd all love it! Thanks for sharing!

  7. I'm usually a cheesecake fan - but that one does look perfect...and delicious! As to those smore's bars. Oh, and Oreo anything! Oh my...this is not good. But I'm printing them anyway!! Thanks -
