Monthly Menu #5

 We did pretty good with our monthly menu; though we did get take out & eat out a few too many times for my liking.  I mean I love take out and eating out but I am trying so darn hard to drop a few more pounds and stick to my Weight Watcher's plans and it's so much harder to do that when faced with so many yummy choices that I don't have to make!   

But I can't complain; we tried lots of yummy new recipes and found a few new favorites to pull into our monthly rotation.  



1.  Date night at Willimantic Brewing Company while Alec was at a party and the other two boys got take out pizza.

2.  Grilled chicken with weigh watcher's pasta salad and salad.


3. Egg roll in a bowl with rice.


4.  Take out from the Pub99 after track meet.

5. Spaghetti and meatballs with bread and salad. (zoodles for me)



6. Tacos/ taco salad/ nacho night-- Basically I cook up taco meat, dice up veggies and everyone creates their own meal.

7. Ham and pea fettuccini alfredo


8. Homemade chicken noodle soup with fresh bread


9.  Mother's Day: Grilled chicken, squash casserole, and salad with a faux chocolate tiramisu/trifle for dessert (basically we just layered coffee soaked lady fingers with chocolate pudding, cool whip, and shaved chocolate). 


10.  Pulled pork, rice pilaf, leftover squash casserole & salad

11. Weight watcher's American chop suey


12. Last minute decision to have ice cream for dinner!

13. Fish casserole  (with chicken fingers and potatoes for the younger boys)


14. Pizza and salad (we end up with take out pizza since it was just easier)

15. Steak, potatoes, and garlic roasted green beans.


16. Chicken stir- fry with rice and riced cauliflower. 

17. BLT grinders with salad

18. Chili in the crockpot 


19. Ravioli with sautéed vegetables and spaghetti sauce

20. Unsloppy joes with fries (butternut for me; frozen for the boys)


21. Shrimp pesto pasta with sun-dried tomatoes (a new and delicious recipe we tried)


22. The younger boys and I were at a roller skating party so my husband and Ian were on their own and we got pizza on the way home at Providence Coal Fired Pizza.

23. Chicken parmesan casserole with pasta, sauce, and salad.


24. Chicken/ sundried tomato orzo dish.




25. Marinated grilled pork chops (using this recipe though I used sun dried tomatoes in place of the hot sauce), pasta salad, & salad


26. Crockpot BBQ shredded chicken, rice, and summer squash/corn. 



27.  Salmon (with chicken tenderloins for the boys), frozen vegetables, and roasted potatoes. 

28- 31-- Our 4 day mini VACATION!  My husband and I went away to celebrate our anniversary.

  2. I have started keeping a record of our meals so I don't always need to reinvent the wheel. I just look back to what we were eating at this time last year. Your meals look great, and some inspiration for me.

    1. Yes, I found that when I was first meal planning I was constantly forgetting foods and meals that we enjoy so I made up a giant master list and began plugging them into our calendar. I do like to try new recipes at least a few times a month too but I am mostly writing this monthly posts so that I have something quick and easy to look back on and hopefully make meal planning even easier going forward.

  5. I am planning a few new veggie recipes for next wek but I am not sure the boys will like them. I ate way too much this weekend so hoping to reset this week. Starting with a little intermittent fasting which usually helps me. Oven roasted veggies sound good!

    1. Yes, us too! Our 4 day holiday away was spent eating everything under the sun that I would normally ever eat and I was actually excited to buy fresh fruits and veggies at the store last night.

  7. Loving all of the pasta salads! Nobody in my family will eat pasta salad so I never make it even though it's one of my favorite things ever! I need to start doing smaller batches for myself to eat for lunch!

    1. Only my husband and older son will eat pasta salads so we don't make them all the time but I do put a little scoop on top of my green salads when we have it on hand. They just taste like quintessential summer to me.
