What's Up Wednesday: March 2021

Since it's already the last Wednesday of the month I am linking up with Shay and Sheaffer for What's Up Wednesday.  Spring is officially here! We've changed our clocks and we're dreaming about spring vacation day trips, beach days, and enjoying more time outside. 
What We're Eating This Week:  I shared our monthly meal plan on Monday but here's what we'll be eating this week:







Tuesday-- Pretzel crusted chicken with broccoli and jasmine rice-- A new recipe I'm trying out. 

Wednesday-- Unsloppy joes with butternut squash fries & salad




Thursday-- Pork tenderloin with couscous and green beans




Friday-- Shrimp scampi over spaghetti-- another new recipe!

Saturday-- Grilled ribeye steaks, baked potatoes, & roasted asparagus


What I'm Reminiscing About: Nothing much really... 

What I'm Loving: Our weather has been beautiful for the past few weeks and I am loving all the extra time we're spending outside! I even broke out my flip flops on three different days.



What We've Been Up To: Lots and lots of hiking, crafting, and baking.

What I'm Dreading: 

What I'm Working On:
Making sure all three boys have all the summer clothes, shoes, and things they need.  

What I'm Excited About: We planned a summer vacation to go and visit my sister; the boys and I are so excited and I'm just hoping that travel will be easy peasy by summer. 

What I'm Watching/Reading:  I just shared my book post earlier this week.  I read lots of great books!



 
What I'm Listening to: My husband is watching Letterkenny-- I honestly can't stand the show but can't seem to block out the sounds as I type.   

What I'm Wearing: Most of my Stitch Fix items on endless repeat (you can read more about them here) and lots and lots of scarves.








And a few other assorted spring favorites. 




What I'm Doing This Weekend: I'm toying with baking up a big Easter dinner this weekend... I guess I should decide that soon!

What I'm Looking Forward to Next Month: Spring break! My boys and I have never had a spring break before but with Alec having a whole week off from school it seems silly to keep going with the other boys' schooling.  We're all taking the week off and I have planned a few fun day trips. 

What Else is New: We have a virtual meeting with Ian's academic advisor today to go through the whole registration process tomorrow; I can't believe he'll be taking some college classes in the fall (in conjunction with finishing up a ew classes with me for high school)!

  2. Your meals look and sound wonderful! And loving all of your outfits! My son has been taking early college classes (virtually of course) this year, can't believe he'll be a college freshman in the fall!! So crazy!!

    1. Most of the classes we looked at today are online too; though a few are hybrid. It will be interesting to see what he chooses to do.

  6. Eek, flip flops! I haven't been brave enough to do that yet, but with flurries in our forecast for tomorrow (apparently not an April Fools!) then I will leave them in the closet for now.

    We're practically having Unsloppy Joes tomorrow. Leftover bolognese mix in wraps.
    We have had some glorious weather here too. It has felt like summer but we're forecast snow next week. lol x

  14. I wanted to love Stitch Fix when I subscribed a couple years ago, but I just couldn't justify how expensive some of the stuff was.

    1. Yeah, I definitely felt some sticker shock as I'm not used to spending that much on clothes. I do think that the sweaters are holding up really nicely to all the washing though.

    1. It is a real struggle for me to get a meal on the table lately... I just seem to lose all track of time in the afternoon and then think "ugh, I don't want to even cook now!" But I am trying to find simple meals that I don't mind making.
