What's Up Wednesday: February 2021 Edition

Since it's the last Wednesday of the month I am linking up with Shay and Sheaffer for What's Up Wednesday.  I feel like this year is just flying by and I can not believe it's already the end of February.  I love that it means we're one month closer to spring!! 
What We're Eating This Week:  I just shared my monthly menu on Monday.  February is only the second month that I have tried monthly meal planning and I love it! With the end of the month in sight we have done a great job sticking to it.


That said this week we're eating:

Monday- A new cabbage soup recipe
Tuesday-- chicken cordon bleu & broccoli casserole with salad
Wednesday-- Baked ziti and salad
Thursday-- Shrimp stir-fry 
Friday-- Stuffed acorn squash
Saturday-- Crock pot turkey breast with stuffing and broccoli
Sunday-- Healthy chicken and vegetables one dish meal with pasta and sauce

What I'm Reminiscing About: I have really been dying to plan a little weekend away for just my husband and I.  I don't know if it's Valentine's day or what but I have really been thinking over all the times we've spent away from home just the two of us.

What I'm Loving: These two flavors of granola; I eat fresh fruit with plain nonfat yogurt and a sprinkle of granola each morning and I have just been loving these two varieties of granola lately.  Dark chocolate macaroon & Strawberry shortcake. Both do a great job satisfying my sweet tooth without putting much of a dent in my daily points.



The dark chocolate macaroon has chunks of dark chocolate and shavings of coconut





What We've Been Up To: Lots of winter hikes and snowshoe "walks."  We went on a walking tour of Newport and took a cupcake decorating class. 














What I'm Dreading:  We're still trying to get Evan's ear all sorted out after this month's CAT scans were canceled (due to the fact that they required too much radiation for his age)... we're still waiting to hear what the next step will be in place of these scans.  

What I'm Working On: My husband and I have been finishing up our basement cabinets and are talking about finally finishing off the basement room we've been working on in fits and spurts over the last 10 - 15 years.  



We put up sheetrock and painted it all 5 years ago and then we sort of stalled on the project-- look at my little helpers!

The cabinets set on that wood base Ian is standing on and those walls are all a deep chocolate brown.


What I'm Excited About: Get get to turn the clocks in just a few short weeks which means it will be lighter later!! Hopefully it will warm up just enough that we can go for family walks after dinner.  

What I'm Watching/Reading:  I just shared all the "new" shows I've been watching this past weekend.  I'd be hard pressed to pick a favorite from either category but I am LOVING Modern Family and my husband and I flew through Red Oaks and Halt and Catch fire. 




All the books I read this month were shared yesterday.. and again it would be hard to pick favorites but I really enjoyed Dear Edward, The Return, and the Tattooist of Auschwitz.



 
What I'm Listening to: Evan is playing video games with his cousin in the room on my right while Alec is listening to an EdPuzzle video for science in the room on my left.  Needless to say it is NOT quiet.  

What I'm Wearing: Lots of boots and snowshoes! Paired with jeans, sweaters, and layers.  











What I'm Doing This Weekend: Probably just taking Alec to karate and maybe working on a few scrapbooking pages. 

What I'm Looking Forward to Next Month: While it still won't feel like spring for several more months to come I am excited that the first official day of spring is coming March 20th. 

What Else is New: Nothing much.  I've just been working on putting together all our tax stuff for the accountant and helping Ian fill out his first tax return form.  I feel like it wasn't all that long ago that I was filing my tax returns with my first job and now it's just nuts that he's old enough to do this too!

  1. Oh yeah, I forgot we'll have to do taxes in March. Ugh. I don't normally mind doing them but I hate trying to gather all the stuff. And I love the navy and white sweater you're wearing in that one picture. I'm also excited about Spring coming -- even if it will still take awhile to get here.

    1. I don't like trying to find all the stuff either; though I do try to put the majority of it in one spot starting in January as they trickle in so I don't have to hunt around so much.

  4. Looks like a good month! I feel our house is in a constant state of construction. We still have rooms with moving boxing in them. To be fair, most of them are for Matt's workshop, which he is trying to finish up.

  6. I’m smiling because I took a picture with my feet in my snow shoes last week, I was snowshoeing a lot! You look so adorable in all your outfits and the basement cabinets are going to look incredible! I love eating granola with my yogurt! And fresh fruit, it feels like a dessert yet it’s so healthy and good for you!

  11. Do you have a recipe for the crockpot turkey breast? I love turkey and usually only have it on Thanksgiving. That granola looks heavenly! I guess I am hungry, ha.

  12. I have been buying the Love Crunch granola for years! I like the chocolate one, and I sometimes get one that has coconut in it, too, but I don't think it's the same one you showed. And it's funny, because my daughter always buys the Bare Naked granola. Enjoyed your post!

    1. I have tried other Love Crunch flavors and enjoy both the dark chocolate strawberry and the chocolate/pb one but this was a new flavor (to me anyway) and I am just loving it.

  18. I can't believe it's almost time to turn the clocks back! I'd forgotten that was coming up! I would love to visit Charleston! My mom and I have been talking about going to South Carolina and Charleston looks so pretty! And those cupcakes are really cute!

    1. I would recommend NOT visiting in the middle of summer like we did; it was so hard to do much sight seeing as it was so unbelievably hot and muggy that we mostly only explored early in the day or late at night.
