Mini Holiday Eggnog Cheesecakes
My son and I decided to try making some mini eggnog cheesecakes that would make the perfect Christmas treats.
Ingredients (all at room temperature):
12 Oreo cookies
12 ounces cream cheese
1/2 cup granulated sugar
1/2 cup eggnog
1 Tablespoon flour
1/2 tsp. vanilla extract
1/4 tsp salt
1 egg
1/4 tsp cinnamon
1/4 whole berry cranberry sauce
We lined our cupcake pan with some liners and placed one Oreo in each cup then set it aside. we preheated our oven to 325 and started making the cheesecake batter.
In the stand mixer we combined the cream cheese with the sugar. Then slowly added in the eggnog, flour, vanilla, salt, and egg. It is a very watery cheesecake; in fact I questioned if they would come out OK in the end. But they did!
In a small bowl we combined the cinnamon and the cranberry sauce then gently swirled it into our cheesecake mixture.
Using the cupcake scoop we filled each cupcake liner and baked them for 18-20 minutes until outsides were set and centers were still a bit jiggly. We turned off the oven and cracked open the oven door; letting them cool to room temperature slowly.
The flavors were delicious; Oreo, cranberry, eggnog, and a hint of cinnamon mixed with that creamy cheesecake texture. YUM!

DeleteI love the idea of eggnog cheesecake, but I would have to swap out the Oreo with a graham cracker or Nilla wafer. I don't know how but I lost my taste for Oreos. I would also love to try this with blueberry!
ReplyDeleteI had wanted to make a crumb crust using Biscoff cookies as I thought the flavor in them would pair perfectly with the cheesecake but Alec just loves Oreos and so I let him use his creative license and save a few extra steps too. These would be amazing with blueberries!
