Recipes We've Been Making
I am always cooking up new recipes as I just love to experiment in the kitchen. I often take photos and share the recipes on my blog because I rarely actually follow a recipe or it's instructions! There are times however where we make little to no changes and so I don't share them as they aren't mine.
But I can't tell you how many times we've tried a recipe, loved it, and then were never able to find the same one again! Does that happen to you?
I thought one way I might be able to prevent that was to start a mini blog series where I hope to share at least a few times a year what recipes we've been trying. I'll give the name of the recipe, a link to the blog where we found it and one of my own pictures.

Here are the ones we've been trying lately:
Mini Chocolate Chip Cheesecake Cupcakes by The First Year; we did use Nilla wafers for the crust instead of dealing with chocolate chip cookie dough and I used full sized chocolate chips in the cheesecake since that's what I had on hand but they were delicious and oh so easy! (The other half were our chocolate cheesecakes we made for my birthday)
We made this Fastest No Knead Bread by Jenny Can Cook early on in the pandemic and I spent a whole day trying to find this recipe again. It is the best tasting bread and it is so easy to make! In under two hours we had a delicious crunchy bread with a soft warm center.
My oldest son constantly requests chicken Parmesan for dinner as it is his favorite meal so I was beyond thrilled to hear him say that this Easy Weeknight Chicken Parmesan Casserole by Heritage Home Ec was just as good as any "real" chicken Parm. we've made I knew it was going to be entered into our monthly rotation of meals. So simple and so good!
While none of my kids would eat this Baked Chicken Zucchini Tomato Casserole by What's Cooking Italian Style Cuisine I thought it sounded delicious! I do think next time I'd use less chicken broth and probably omit the ricotta cheese altogether as I am just not a ricotta fan.
When I saw that Tanya from The Other Side of the Road shared this Magnolia's Table Cinnamon Bread I literally headed down to the kitchen to make it that very morning. It made two delicious loaves of bread and they didn't even last a week! They were amazing.
When I saw these pumpkin donuts on 5 Easy Recipes with Cake Mix and Canned Pumpkin on Recipe Diaries I just knew we had to try them. They were good but next time I'd like to try adding an egg or two as I thought the batter was just a bit too moist and almost tasted a bit underdone to me because of all the pumpkin.
We like to have cornbread with our chili and since I'm not a huge fan of cornbread we're always trying a new recipe (hoping to find a favorite). This month we tried making this Sweet and Moist Honey Cornbread by The Food Charlatan. I loved the crispy edges from the hot cast iron skillet! I think I have found my new favorite cornbread!

I tend to follow recipes pretty closely with bread since I know yeast is so temperamental but I rarely follow recipes otherwise.
