Chocolate Hazelnut Cookies and Cream Cookies

I was really craving cookies the other day but wanted something more than traditional chocolate chip ones.  I went hunting through the cabinet to see what I could come up with.   In mixing up a little of this and a little of that I made some pretty fantastic cookies.

Even with making just over 4 dozen cookies they were gone in 24 hours!  I couldn't believe it.



Hazelnut Cookies & Cream Cookies-- recipe makes about 4 1/2 dozen cookies
Ingredients:
1 cup graham cracker crumbs
2 cups flour
1 tsp. baking soda
1/2 tsp salt
1 cup butter; softened
1/4 cup Jif Hazelnut/ Cookies and Cream spread
3/4 cup sugar
1/2 cup brown sugar
2 eggs
2 tsp. vanilla extract
1 cup mini chocolate chips

In a medium mixing bowl I mixed together the graham cracker crumbs, flour, baking soda, and salt.


I think the key to these cookies is the Jif Cookies and Cream Hazelnut Spread; but I bet you could use Nutella and some crushed cookies and cream too if you can't find this at your local store.  I bought mine on Amazon as a prime pantry add-on just to try it.


I mixed the butter, hazelnut spread, both sugars and the eggs together in my stand mixer using the paddle attachment.  I then added in the vanilla extract too.  Once I had a nice creamy mixture I added in the flour/dry stuff and then folded in the mini chocolate chips (regular sized would work good too but I had the minis on hand).


I scooped them onto a parchment paper lined cookie sheet and baked them at 350 for 9-11 minutes or until the edges were lightly golden brown.  I let them sit for 2 minutes to firm up a bit and cool off slightly before moving them over to a cooling rack.


You can see the bits of chocolate and even some bits of Oreo and graham cracker crumbs if you look closely.


I really wasn't sure about mixing all these different flavors together-- graham cracker, Oreo, hazelnut, chocolate, vanilla... but they worked so well together!  


My boys began gobbling them before they had even finished cooling off!  I might have snuck one or two myself.
