Macaroni Salad with Ham and Cheese
We had lots of leftover ham in our freezer and I thought it might be delicious to use some in a new macaroni salad recipe. Only problem was I didn't have any macaroni on hand so I swapped it out with some bow-tie pasta instead.
This was delicious!
Ingredients:
12 ounce box bow-tie pasta
9 ounces frozen peas, thawed
1 cup diced ham
1/2 cup diced Monterey Jack cheese
1 cup mayonnaise
1 Tablespoon yellow mustard
1 Tablespoon ranch dressing mix
Cook the pasta according to the package directions and drain. I like to rinse with cold water too before adding it to the salad.
While the pasta is cooking, combine peas, ham, & cheese in a medium bowl.
In a small bowl combine mayonnaise, mustard, and ranch dressing mix.
Add cooked and cooled pasta to the peas, ham, and cheese, and top with mayonnaise mix. Stir well to combine. I like to make my pasta salad in the morning and then just before serving I did add one spoonful scoop of mayonnaise and just a small squirt of mustard since the pasta has a tendency to soak that up.
Such a tasty side dish to go with our grilled chicken.

I think it would be just as yummy without the peas. My husband loves peas and complains I never serve them (mostly because he's the only one that really likes them!).
