Friday Favorites: Shelter in Place Week #9
We had such a great week! We went on quite a few hikes and I was spoiled like crazy for Mother's day. We had lots of sunny days outside; some cold and some so nice and warm.
We made plans on Friday to head to Purgatory chasm and see if we could actually hike the chasm or just the surrounding trails. The chasm was open for one way traffic and while the trails and chasm were crowded we were easily able to keep our distance from others. It was a beautiful day for it temperature- wise and we hiked for an hour.
I spent the afternoon working on the blog and cooked up some unsloppy joes with butternut squash fries (regular fries for the boys) and corn on the cob for dinner.
We woke to snow flurries on Saturday. My mother in law dropped off donuts for the kids and I gave her her mother's day gift. I hung around in the kitchen in case Alec needed any help with his red velvet cheesecake he was making and used that time to get ahead on blog posts. After lunch my husband and I ran out to do errands and ended up spending the whole afternoon at my mother in law's catching up with a few family members. We continued to have flurries off and on and the wind picked up so much that we lost power at home around 4 o'clock that afternoon.
No power meant we ended up with takeout from the Pub 99; I got their Vermont cheddar burger and it was SO good! We ended the night with haircuts for all the guys. We're getting pretty good at using the clippers.
I spent a lazy Sunday morning in bed on Mother's Day and watched a few episodes of Good Girls while the boys began making my breakfast. At one point Alec was cooking waffles, my husband was cooking bacon, and Evan was mixing up a copycat Texas Roadhouse cinnamon butter to go on them.
Once we cleaned up from breakfast, my husband and I decided to head out on a hike. We found a local trail that was listed as 8.5 miles. We tackled the trail and with a few shortcuts we hiked a little over 7 miles in just about 3 hours. It was breezy when we started but by the time we finished up it was pretty nice out. It was great spending time together just the two of us.
After our hike and a quick shower I helped Alec make these Texas Roadhouse copycat rolls for dinner. We ran out to deliver mother's day gifts and by the time we arrived home it was time for everyone else to start cooking dinner. Ian gave me my gift; they all ordered things that will slowly trickle in over the week. Today I got some pot handle covers for our cast iron skillet from Evan and Ian picked out a container to carry my extra camera lens with me when we hike.
We settled down a delicious steak dinner with loaded baked potatoes, broccoli, salad, and our Texas Roadhouse buns/ butter. We rented Jumanji: Next Level and watched all together as a family then each had a slice of Alec's cheesecake. It was an amazing day!
Monday was rainy and cold so we spent our day inside and cleaned the upstairs. Evan and I walked to get the mail during a break in the rain but only made it 1/2 way before it started raining again. I was soaked by the time we got back and all the mail was nice and soggy but we were laughing. One of Alec's Mother's day gifts arrived and I just love this nail polish color.
We cooked up the chicken I had marinating since Saturday along with the beets and carrots I had prepared too and served them with rice and salad for the boys.
We had sunny skies on Tuesday and I was excited to put together my new chair that my husband got me for Mother's day. Evan and I also cleaned out a bit of the basement and Ian helped me put out the furniture on the deck too. Now if it will just warm up we're all set for lots of outside time!
Evan and I walked to get the mail and I received a few other mother's day gifts; a shirt from Alec, some summer weight hiking capri pants. I worked some more on my puzzle while making dinner.
We had ravioli with sauteed zucchini, summer squash, mushrooms, and onions (though only my husband and I ate the veggies). I cooked up some spaghetti sauce and plain pasta for Alec and heated up garlic bread. Serving it all with a tossed salad so the boys did get some "real" veggies in too.
Ian was heading off to work early on Wednesday so it threw our morning schedule off slightly. The younger boys and I took advantage of the sunny blue skies and headed out for a hike. We tried two new trails and hiked for a little over an hour and a half arriving home just in time for lunch. We watched Harry Potter and the Order of the Phoenix.
I baked up some delicious red velvet cookies (using the leftover red velvet cake mix) with chocolate chips for snack. We had burgers, hot dogs, fries, and cole slaw for dinner then my husband and I went to do groceries. After they were put away we ended our night with a few games of Pitch.
Ian was heading off to work again on Thursday but it was another beautiful day. The boys and I headed out hiking and tried out a new trail. We ended up hiking for over 2 hours covering over 4 miles of trails. It was hot and we were both thirsty and hungry by the time we finished up. I was going to order Subway sandwiches for us all but my phone kept dropping the signal and by the time we got it working right we had decided to just stop by a local ice cream stand and enjoy ice cream for lunch. We had to eat in the car but it was delicious and well worth it!!
It was nearly 70 degrees out by the time we arrived home so we headed outside to enjoy the fresh air. I love wearing capri pants and flip flops!! We ended up walking over to the cottage and met up with another family member to meet their new dog & catch up-- it's so nice that the weather is finally cooperating to visit with family members outside. Ian got home from work and took out his 4 wheeler while I went to cook dinner-- chicken breasts, egg noodles, and broccoli.

Wow! You got a lot of hiking in. We got snow on Saturday but it never warmed up until yesterday. It’s raining again today.

ReplyDeleteYeah, it's nuts! His cheesecake was really good. This is only the second one he's baked up and he's determined to keep trying until he bakes one that doesn't crack and turns out "perfect".... I'm all for it but I'm not sure my jeans are.

DeleteI'm really wishing I written weekly done shelter in place posts, but oh well. Love seeing the outside pics. Snow flurries? Yeah, this May has been really cool for us even down here in the south, but temps this weekend are supposed to be HOT. Love that shirt!
ReplyDeleteI almost didn't at first because I kind of wanted to pretend it wasn't happening but knew someday I'd be thankful to have this look back at this crazy time. We've since warmed up to near 70 and it's supposed to be even warmer this weekend. The shirt is so comfy! It's a nice lightweight blousy material and so nice and cool feeling.

ReplyDeleteI always joke with my family that I go to Texas Roadhouse for the rolls and butter; I mean all their food is fantastic but really it's all about the rolls and butter for me. It has been a fabulous week of hiking but I'm finding my hiking partners are less than enthused... especially when I keep finding longer hikes to try out.
