Crock Pot Hamburger Soup
I took a few photos when I made this recipe back in the late fall but I had forgotten to write down my recipe so I had to recreate my recipe using my photos and I think the second time around this soup might have been even better!
A hearty soup is perfect for these cool evenings we're still having here in New England and they're a great way to keep a nice low- point Weight Watcher's dinner too.
This meal comes together so easy and cooking it in the crock pot all day makes the house smell great by dinnertime.
Ingredients:
1 lb hamburg
1/4 onion; diced fine
1 tsp. minced garlic
salt and pepper to taste
1 16 ounce package frozen corn
about 2 cups sliced carrots
1 14.5 ounce can diced tomatoes with the juice
1 Tablespoons beef bullion
4-5 cups water
1 24 ounce can pasta sauce
2 cups pasta (I used Ditalini but any small pasta shape would do)

In a skilled brown up the beef with minced onion, garlic, salt and pepper.
While it is browning combine other ingredients in the crock pot.
I like to drain the fat out of the browned beef before adding it to the soup but that's a matter of taste. Once the meat is added into the crock pot I put I on low and let I simmer for 6-8 hours.
Adding in the pasta just 30 minutes before serving.
