White Chocolate Raspberry Cake
Alec made a fabulous white chocolate raspberry cake for us all on Valentine's day. It was amazing! He found the recipe on Pinterest and followed it fairly closely. I was pretty surprised since the recipe calls for starting with a boxed mix and doctoring it up; Alec typically does not like to use a mix. The cake was amazing though and plenty challenging for him to make.
The Isty Bitsy Kitchen does a great job with their directions so I'm not going to bother repeating their directions or ingredients but I'll just add in a few things we changed. We did buy 12 ounces of white chocolate instead of 10 and used those extra bits to decorate with. We strained our raspberry jam filling so it was not full of seeds and we omitted the frosting between each of the cake layers thinking the jam would be enough sweetness and taste-- and we just LOVED it!
He mixed up the cake with the melted chocolate and pudding mix and baked 3- 8" round cakes on Thursday. They smelled heavenly!
On Friday he mixed up the raspberry filling and once cooled we put it through a mesh strainer to try and remove most of the raspberry seeds. I love the taste of raspberries but I really do not like the seeds! I am so glad we did this step since almost 1/2 of the jam mixture had been seeds.
He mixed up the white chocolate frosting following the recipe and piped a small border around each cake layer. Using the pressed raspberry filling he filled in the bottom two layers with the jam mixture. We decided not to put any frosting over them; but just stacked them up. He then frosted the whole cake starting with the sides and made a wide border around the outside top of the cake.
He mixed up a raspberry white chocolate frosting (just adding a bit of the leftover pressed raspberry jam to the frosting) and spread that on the top center of the cake; making little piles of frosting to hold some leftover bits of chocolate he had left. He also used a vegetable peeler to add a few flecks of chocolate sprinkles.
The raspberry layers add a nice pop of color and all the extra fixing we added to the boxed cake mix made it so moist and flaky!

Definitely do that! We often make changes here and there and then I don't feel bad typing up the recipe we use but this is one time we stuck very close the recipe and it did not disappoint. How can you go wrong with melted white chocolate mixed into both the cake and the frosting?!
