Delicious and Healthy Butternut Squash Fries
Once we joined Weight Watchers, my husband and I struggled to find something delicious to go with our burgers and steaks that were not going to cost us many points. I love French fries and sweet potato fries so when I saw a recipe for butternut squash fries I just knew we had to try them.
I must make them once a week now and for ZERO points you just can't go wrong!
There are only 4 ingredients needed:
Butternut squash
spray bottle of oil
salt
pepper
When picking a squash for fries I look for one with a long neck since that is the part we use to make the fries. I actually cut the "bulb" part off the squash and save it in a Ziploc bag for another side dish another night.
Peel the squash neck and then cut into strips like fries. I find it helpful to cut the neck into smaller blocks and then make strips from each block.
Once they are all cut into somewhat equal sizes I lay them out in as close to a single layer as I can get on a parchment paper lined cookie sheet.
Then I lightly spray them with oil and give them a good sprinkling of salt and pepper.
Then I roast them in the oven at 400 for 20-30 minutes until they are fork tender.
They are delicious and have completely taken the places of fries.

Oh, these look so good. Isn't it hard to cut a squash like this though? I can barely cut one in half!
ReplyDeleteIt is a bit hard to cut the squash but I do find it easier to cut it into slices than I do cutting it in half.
