Tropical Broccoli Salad

I love broccoli salad, well salads of all kinds really, but knew that if I wanted to keep eating and enjoying them without guilt I was going to have to overhaul my favorite summer salad recipes.  

I've already made my pasta salad Weight Watchers friendly so I decided to put together a Weight Watchers friendly broccoli salad.  And you know what?  I like this better than my original!  Don't get me wrong my original is delicious with a hint of maple, chewy craisins and soft cheese but it is not WW friendly at all.  



I looked through the cabinets for what I had on hand and I came up with a fruity and tropical broccoli salad that is nice and light and perfect for those hot summer nights when no one feels like cooking.  

Ingredients:

4 cups broccoli florets 
1/2 cup red seedless grapes, sliced in half
2 stalks celery, sliced
1 cup pineapple, cut into bite sized pieces
1/4 cups pecan halves
2 Tablespoons bacon bits
1/2 cup non-fat Greek yogurt, plain
4 ounces Skinny Girl Poppy Seed salad dressing (or another fat free dressing of your choice)

In a medium bowl combine broccoli, grapes, celery, pineapple, pecan, and bacon bits. 


In a small bowl combine Greek yogurt with salad dressing.


Pour over salad (you might not need it all; I just poured until everything was evenly coated).  As the salad sits in the fridge the broccoli will release some water so you want to make sure not to pour too much dressing on.  I cover my dressing with cling wrap and keep nearby until I'm ready to serve.


After the salad has had time for all the flavors to combine (2 hours or so in the fridge), take it out, give it a good stir and see if any more dressing is needed.  Then serve.


I estimated we'd get about 6 servings out of it as a side dish and each serving was just 1 WW Freestyle point!  But you could easily make a meal out of it with a large bowl being under 3 points!
