WW 4 Point Pasta Salad

You aren't going to notice any large changes from our favorite pasta salad with grapes, broccoli, and olives that I've shared previously but, in starting Weight Watchers, I am slowly going through all our old recipes and making small changes to make them more WW friendly.



I beefed up our salad with some extra vegetables and swapped out our old favorite dressing with a bottle of Skinny Girl balsamic dressing.  Now one serving of the pasta salad (1 measured cup) equals just 4 WW points and it pairs perfectly with a tossed salad and some grilled chicken breasts for a very tasty summery meal.

Ingredients:
1 box tri- colored rotini; cooked until al dente
1 jar black olives, drained
1/2  cup grapes; washed and sliced in half
1 cup broccoli florets; washed
1/2 cup sliced carrots
1/2 cup diced tomatoes
1 jar Skinny Girl balsamic vinaigrette

While I cook up the pasta according to the package directions, I mix all the fruits and vegetables with the dressing.


After the pasta has been drained and rinsed with cold water I add that into the bowl and give everything a final toss.  I like to prepare the salad in the morning if we're eating it for dinner to give all the foods time to soak up some dressing and let those flavors meld.

Then right before serving I give it another good stir.


It's so tasty and I am thrilled to know I won't have to give up my pasta salad this summer.
