March Pinterest Challenge -- Creamy Turkey Noodle Casserole
It's the third Tuesday of the month and that means it's time for March's Pinterest Challenge Blog Hop, hosted by My Pinterventures. The purpose of this Pinterest Challenge is to motivate all the participants of this hop (and you too) to not just pin, but to make it happen! I have been having so much fun with this blog hop and hope you'll consider joining us!
Lately I have been trying out lots of new recipes. I often shy away from new recipes since I do have two picky eaters but I had hoped they might enjoy this turkey noodle casserole. Spoiler alert-- they didn't but the rest of us thought this was pretty tasty!
I had this Leftover Turkey Noodle Casserole from The Kitchen is my Playground on my Pinterest board and it looked so delicious I just knew we had to try it.
We made a few very slight modifications to the original recipe.
Here is what we did:
Ingredients:
12 ounce bag egg noodles
6 tablespoons cream of soup mix (I use a recipe similar to this)
1 1/3 cup water or milk to combine with soup mix
2 cups sour cream
1/3 cup milk
1/4 cup grated parmesan cheese
1 1/2 cups shredded cheese (we used a pizza variety our local store sells); divided
3 cups cubed leftover turkey
16 ounce bag frozen mixed vegetables (I forgot to thaw mine but they worked just fine frozen)
First step was to get the noodles cooking according to package instructions. While they were cooking I turned to preparing the rest.
In my microwave I combined the cream of soup mix with the water and microwaved on high for 2 1/2 to 3 minutes. (Originally I cooked up 3 tablespoons in 2/3 cup water to make the one can amount called for in the original recipe but found that I needed to double the amount once I had my recipe put together).
I wanted the water boiling and was looking for the soup mixture to thicken up. I put lots of herbs and spices in my soup mix so I omitted the salt, pepper, sage, and thyme the original recipe called for.
Once I had my cream of mushroom soup made, I combined the soup, sour cream, milk, parmesan cheese, 1 cup of the shredded cheese, my turkey and mixed vegetables in a large bowl.
Once the pasta was cooked we drained it and added it to our bowl. We mixed well and poured the whole thing into a lightly greased 13x9 pan.
I topped it with the remaining 1/2 cup cheese and baked it in a 350 degree preheated oven for 30 minutes.
It was delicious hot out of the oven! Nice and creamy with just a bit of cheese. YUM!
It re-heated beautifully too for leftovers and I bet it would be just great to make ahead and freeze!
