February Pinterest Challenge-- Cheesy Chicken Chowder in a Bread Bowl

I have been eyeing Simply Stacie's Cheesy Chicken Chowder pin for a long time and finally decided to make it one cold day last month.  It was AH- MAZE-ING!!!

I did have to make a few adjustments; mostly because I really need to go grocery shopping and partly because I wanted to make it just a bit healthier.  I added a bit more vegetables and cut back on the cheese.  I also wanted to get the chowder started while we were out hiking and prepared part of it in the crock pot.



Ingredient list:

3 cups chicken broth
1 Tablespoon onion flakes
1 cup celery, sliced
2 1/2 cups potatoes, diced (though I think I had closer to 3)
1- 12 oz bag frozen mixed vegetables
3 cups diced, cooked chicken
1/4 cup butter
1/3 cup flour
2 cups milk, skim
1 cup cheddar cheese, shredded
individual bread bowls (We used 3 but the chowder made enough for 5 or 6 of them easily).

In the crock pot I combined the chicken broth, onion flakes, celery, potatoes and frozen mixed veggies and cooked it on low for 7 or 8 hours.


Once we arrived back home and the potatoes were fork tender I added the chicken.


My intent had been to cook up the cream sauce and add it to the crock pot but the cream sauce was quite thin and I wanted to thicken it up so I ended up pouring everything from the crock pot into my pan.  Luckily I had used one big enough to hold it all.

In a large sauce pan I melted the butter and added the flour to make a roux.  I poured in the milk slowly making sure to dissolve the roux.  I added the shredded cheese and all the contents of the crock pot.



Over medium high heat I brought the chowder to a low boiling stirring frequently to prevent any burning or anything sticking to the bottom of the pan.  Once it had thickened up nicely I took the pan off the burner to cool for a bit while I prepared the bread bowl.

I cut a hole in the top of each loaf and scooped out enough of the bread to make room for the chowder.


Then I ladled the soup into each bowl and served with the pieces of bread I had cut/ scooped off.  It made for a delicious and hearty winter meal!

    1. We're supposed to be getting more rain and snow too. I'm sure it would be just as yummy in a bowl with some crackers or bread served beside it.
