Chocolate Chip Strawberry Bread

I had a rather large batch of sliced strawberries that were starting to go bad and I knew I needed to bake up something yummy that would entice my family to eat them up.

I had remembered one of my mom's friend making some strawberry bread when I was younger and thought I'd try whipping up a batch of my own.



I made enough for 2 loaves and they were delicious!!

To make the Chocolate Chip Strawberry Bread you will need:

1 cup vegetable oil
4 eggs
3 cups flour
2 cups sugar
1 tsp salt
1 tsp baking soda
2 teaspoons cinnamon
3 cups sliced strawberries (I probably should only have used 2 cups but that's what I had on hand to use up!)
1 cup semi sweet chocolate chips

In the stand mixer I whipped up the eggs and added the vegetable oil.  In a separate bowl I combined the flour, sugar, salt, baking soda, and cinnamon together before adding it to the egg mixture.

I used a spatula to fold in the sliced strawberries and chocolate chips.

I prepared two loaf pans with parchment paper and divided the batter evenly between them.  I placed them in the oven preheated to 350 degrees for about an hour ( I say about because somehow someone turned off the oven and I didn't realize it until the timer went off!  I turned the oven back on and kept checking the bread in 15 minute increments until a knife inserted in the middle of the loaf came out clean).

After the bread had cooled a bit I pulled them out of the pans and put them on a cooling rack.  We sliced them while they were still warm and slathered them with butter... amazing!


As you can see our  bread was chuck full of strawberry bits!

I just love baking with strawberries.  We've also made strawberry white chocolate chunk cookies, strawberry coffee cake, and strawberry jam.

  3. What a fabulous combination - strawberries and chocolate! I'm sure the strawberries help make the bread moist, and I'm curious about the taste with the added cinnamon! Pinned!

    1. It added a nice burst of something unexpected but it wasn't strong enough to take over the taste of the chocolate or the strawberries.
