Coffee Peanut Butter Cookies with Chocolate Chips
I was in the mood to make some cookies the other week so I raided the cabinets to see what I could find. I had lots of coffee granules left over from making my mother in law's Vanilla Mocha Trifle Cake and thought that might make a great addition to our favorite cookie recipe!
We ended up with some very flavorful, chewy cookies that everyone adored.
Ingredients:
2 sticks butter, softened
2 cups granulated sugar
1 cup brown sugar
1 1/4 cups peanut butter
2 Tablespoons milk
2 Tablespoons vanilla
3 Tablespoons decaf instant coffee granules
3 eggs
2 cups flour
1 tsp baking soda
1 tsp salt
1 12 ounce bag semi- sweet chocolate chips
To make cookies:
Preheat oven to 350 and prepare cookie sheets with parchment paper.
In the stand mixer combined the butter, sugars, peanut butter, milk, vanilla, coffee granules and egg. In a small bowl combined the flour, baking soda and salt and then slowly added it to the wet ingredients mixing until everything is nicely combined.
Serve and enjoy!

Add in the chips using a spatula and then scoop heaping teaspoons of batter onto the cookie sheet; making sure to place them a few inches apart since they'll spread out while cooking.
Bake for 10-12 minutes until the edges are lightly golden brown. Let them cool on the cookie sheet for 2 minutes then move to a wire rack.
Serve and enjoy!

DeleteAgain you share an awesome recipe. I really need to bring myself to give some of those recipes a try. Maybe when the days get shorter, the weather colder I need some comfort food and will try my hand at one of your amazing cookie recipes.
