Everything But The.... Cookie Recipe
My husband loves chocolate chip cookies and while I do enjoy them myself I enjoy making new and different things in the kitchen. I remembered some cookies I used to make for him waaay back before we had kids that were a huge hit.
Not really remembering HOW I used to make them I decided to experiment in the kitchen and see if I could come up with something yummy.
These cookies were perfect! With the crispy and chewy texture of a chocolate chip cookie, lots of chips of all flavors and a bit of peanut butter too I think we've found a new family favorite!
Ingredients:
2 sticks butter, softened
2 cups granulated sugar
1 cup brown sugar
3/4 cups peanut butter
2 Tablespoons milk
2 Tablespoons vanilla
3 eggs
2 cups flour
1 tsp baking soda
1 tsp salt
1 12 ounce bag semi- sweet chocolate chips
1 12 ounce bag butterscotch chips
Preheat oven to 350 and prepare cookie sheet with parchment paper.
In stand mixer blend together butter, both sugars, and the peanut butter.
Slowly add in milk, vanilla, and eggs until well combined.
In a separate bowl combine the flour, baking soda and salt. Mix together and then add it to the stand mixer all at once. With the mixer on low slowly incorporate into all the wet ingredients. The cookie dough will look light and fluffy.
Gently fold in all the chips then scoop and bake. I have a cookie scoop from Papered Chef that I just love and it gives me nice uniform sized cookies. I baked my cookies for 12 minutes each then let them cool on the cookie sheet for 2 minutes before moving them to a cooling rack to cool completely. They will deflate as they cool.
They were nice and crispy on the outside and chewy in the middle with a hint of peanut butter and lots of gooey chips. YUM!
