Egg Salad BLT Sandwiches

We often eat BLT sandwiches for dinner and a few weeks ago, when it was on the menu and we had lots of eggs in our refrigerator I decided to try a new recipe-- egg salad BLTs.

I had bought a couple dozen eggs at the grocery store (as I always do) and my mother in law brought us at least a dozen of farm fresh ones when she was chicken sitting so I decided to cook up a batch of hard boiled eggs and make some egg salad.  I also made a couple quick and easy quiches to pop in the freezer!



It was my first time making egg salad BLT sandwiches but we just loved them!  And they were so easy to make.


To make the egg salad BLT Sandwiches you will need:

1 lb. bacon, cooked
1 head romaine lettuce, washed and dried
3 large tomatoes, sliced
Egg salad (recipe below)
bread, grinder, or bulkie rolls

First I cooked up the pound of bacon on our electric skillet.


As the bacon was cooking I sliced up the tomatoes and washed the romaine lettuce.


I threw together the egg salad using 6 of the eggs I had hard boiled.

Egg Salad ingredients:

6 hard boiled eggs
1 stalk celery, washed and chopped
1 tsp celery salt
1 tablespoon dried onion
1/4- 1/2 cup mayonnaise
1 tsp yellow mustard

I chopped the eggs and celery.


Added on the spices.


And mixed in the mayonnaise and mustard.



Then I began assembling the sandwiches.  I put egg salad on one side of the bread and layered the tomato, lettuce, and bacon on the other.  I didn't add extra mayonnaise to the bread since I knew there was plenty in the egg salad but you sure could.




Doesn't it look good?!


The soft texture of the egg mixed perfectly with the crunch of the lettuce, bacon, and celery.

    1. Right?! I hadn't either but figured eggs and bacon were good together and I often put lettuce and tomato on my sandwiches so why not just combine all three? It was so good.
