Andes Mint Muddy Buddy Recipe

My youngest son just loves mint! He's always asking for mint chocolate chip cookies or mint chocolate chip ice cream so I just knew he'd love some mint muddy buddies.



We happened to have all the ingredients lying around the house and so I offered to help the boys make some Andes thin mint muddy buddies.


Ingredients:

6 cups Rice Chex
6 cups Corn Chex
2 packages Andes Mints
6 ounces white chocolate chips
1 1/2 cups powdered sugar

In a large glass bowl we measured all the Chex and gave them a good mix.


We placed all the unwrapped Andes in a small bowl and added the chocolate chips.




We microwaved in 30 second increments until we had a nice smooth melted chocolate.


Then we poured the melted chocolate over all the Chex and began mixing.  I wanted to work fast before the chocolate began hardening and I knew I wanted as even a coating as I could get. Once all the chocolate was mixed in we sprinkled on some powdered sugar and, again, kept mixing until it was all nice and evenly coated.


Doesn't it look yummy?!  My boys gobbled it right up.
