Crock Pot Lasagna Soup
We had a blizzard blowing through our area early in the week and I knew I wanted a nice warm hearty soup to keep us all feeling toasty warm.
I ended up making a lasagna soup and it was delicious! I love to prepare soups in my crock pot so that the smells are tantalizing and the work is minimal.
To make this thick and hearty soup I used:
1 lb. burger, cooked
1 tsp. minced garlic
1 Tbsp. dried flaked onion
2 cups shredded mozzarella cheese
1 15 ounce can tomato sauce
1 14.5 ounce can diced tomatoes
water (I filled the empty 15 ounce can 3 times to the top)
1 tsp dried parsley
1 tsp dried basil
1 tsp. Italian seasonings
1/2 cup frozen chopped spinach
8 lasagna noodles
In a small frying pan I browned up the burger with the onion flakes and garlic. Once brown I put the burger in the crock pot and added all the other ingredients EXCEPT the lasagna noodles. I set the crock pot on high and cooked it between 5 & 6 hours.
I checked on it a couple of times and noticed a few rather large clumps of cheese; not wanting to get a mouthful of cheese in any bite I would stir it and press the chunks of cheese against the side of the pot to break them up.
About an hour before we were going to eat I broke the noodles into bite sized pieces and added them to the pot to cook.
It was so tasty and filling!
Look at all those meaty chunks, hearty noodles, and bits of tomato and spinach!
Of course we had to serve it with bread. That's the Italian way isn't it?
