Chicken Cordon Bleu and Broccoli Casserole

I saw a recipe for a Chicken Cordon Bleu casserole over at Simply Stacie and while I thought that her recipe sounded fantastic, I could just tell from her photos that my kids would not eat it.  It looked like it had just a bit too much cheese for my family's liking plus we aren't fans of cream of anything soup.

I did however think that I wanted to come up with something similar because I still had a lot of leftover ham and chicken in my freezer.

So I did what I always do; I made up a recipe!  I added some broccoli and some crushed Ritz crackers and found a wonderful new dish that everyone actually ate.  Now my youngest two might not have loved it but they did eat it so I was more than happy with that!




Ingredients for the casserole:

2 cups cooked chicken, cut into bite sized pieces
2 cups cooked ham, diced
1 cup frozen broccoli florets, thawed
1 1/2 cup shredded Swiss cheese
2 Tablespoons butter
2 Tablespoons flour
2 cups milk
1 Tablespoon spicy mustard
1 tsp onion powder
1 tsp garlic salt

For the topping:

1 sleeve Ritz cracker, crushed
3 Tablespoons butter, melted
1 tsp. parsley flakes

I started with a layer of chicken in my Pyrex dish.


I covered the chicken with diced ham.

 Then I added the broccoli.


I topped it all off with the Swiss cheese.


In a small saucepan, I melted the butter and added the flour to make a roux.


I slowly stirred in the milk with a wire whisk and then gradually added in the mustard, onion powder and garlic.  I cooked over medium heat until it had thickened up. 


Then I poured the sauce over the casserole.


I made my crumb topping by mixing together the crushed Ritz crackers with the melted butter and parsley and topped the entire casserole with them.


I baked it all in a 350 degree oven for 30 minutes until the top was golden brown and the sauce was bubbling.


I served it while it was nice and hot but did give the dish just 4 or 5 minutes to rest so the sauce would thicken up a bit.




We served our casserole with baked potatoes but I could see serving this over rice or noodles too.  It's such a versatile dish.

  4. LOVE casseroles and this one looks so good!! I saw you on the Creative Mondays linkup and am glad to have found your blog. I'm a homeschooling mom, too. And we've been looking for new meals to try because we've been in a bit of a rut. I'm a vegetarian, though, so maybe this dish could be made without the meat and then the meat could be added later? Sounds yummy!

I wouldn't see why this one wouldn't work with an assortment of vegetables or substituting some rice or pasta for the meat... maybe. I'll have to play around with it and see what I can come up with.

  6. alas I would need to find a substitute for the broccoli.... but thinking this would work well with my leftover turkey and some deli meat... maybe with some peas... hmm.... I see a recipe in the making. :)
