Our Favorite Pot Roast Recipe
Nothing says fall to me quite like cooking up hearty meals in my crock pot! My personal favorite is pot roast. I just love how flaky, tender, and flavorful the meat is when slow cooked in the crock pot.
I do not cook potatoes or vegetables with my pot roast since we prefer to eat mashed potatoes and a variety of vegetables with the meat but you could easily add carrots and potatoes to this recipe for a complete Yankee pot roast meal.

To make the post roast you will need:
4 lb roast
salt and pepper; to taste
1 heaping teaspoon of minced garlic
1 Tbsp minced onion (I used dried flakes but fresh onions would work great too)
2 Tbsp brown sugar
1/4 cup balsamic vinegar
1 Tbsp soy sauce
1 Tbsp orange juice
I always make sure to place my roast in the crock pot with the fattiest side up and sprinkle it with salt and pepper then spread the minced garlic out on the meat.
In a separate bowl I mix together the brown sugar, vinegar, soy sauce and orange juice.
I pour the sauce over the roast and set the crock pot on low for 8 hours or so until the meat is flaking apart at the sides when I touch it with the fork.
Once it's cooked I take it out and slice it into portions.
We serve the roast with just a bit of the juice from the crock pot for dipping.
Such a wonderful warm and hearty meal perfect for those crisp cool nights!
