Dilly Potato Salad
Looking to come up with yet another potato salad recipe (you can check out our Loaded Potato Salad Recipe here), I began experimenting last week with a few new ingredients. I managed to come up with another potato salad recipe that we just loved!
My boys love pickles! We tend to buy at lest one jar a week but more often than not have three different varieties in our fridge at any given moment.
I thought why not combine that dill pickle flavor with our potato salad?
Thus the Dilly Potato Salad was born.
Ingredients:
2 lbs red potatoes
1/2 cup mayonnaise
1/2 cup sour cream
1/8 cup sweet relish
1 Tbsp chives
1/2 Tbsp dill weed
2 Coarsely chopped hard boiled eggs
salt and pepper to taste
1. Wash and cut up the potatoes into bite sized pieces then bring to a boil. Boil until fork tender.
2. In a medium sized bowl mix together mayonnaise, sour cream, sweet relish, chives, and dill weed.

2. In a medium sized bowl mix together mayonnaise, sour cream, sweet relish, chives, and dill weed.
3. Drain and rinse potatoes in cold water. I left mine in the colander while peeling and chopping my hard boiled egg. Then I tossed the egg and potato with the mayonnaise mixture.
All those spices made this the perfect salad to serve with cheeseburgers and hot dogs. YUM!

I don't make potato salad often since it's not a huge family favorite but it is nice to break up the monotony of pasta salad, salad, and corn on the cob that the boys are always requesting.
