Strawberry White Chocolate Chunk Cookies
We went strawberry picking last week and when we were paying for our strawberries the boys convinced me to buy some chocolate chip cookies. I persuaded them to give to me a taste and popped a strawberry in my mouth at the same time. I mentioned that it tasted like a chocolate covered strawberry and Evan suggested we try making strawberry cookies with chocolate chips.
Since we had white chocolate but no milk or dark chocolate we decided to make strawberry white chocolate chunk cookies.
They were AMAZING! We used our Blueberry White Chocolate Chip recipe with just a few minor variations.

Ingredients:
- 1 cup butter or margarine; softened
- 1 cup sugar
- 3/4 cups brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups white chocolate chunks
- 1 1/2 cups diced strawberries
1. Preheat oven to 350.
2. In stand mixer beat butter and both sugars on medium speed until nice and fluffy. Add in eggs and vanilla. Beat until combined.
3. In a separate bowl combine flour, baking soda, and salt. Then add to wet ingredients using low setting on stand mixer.
4. Cup up chocolate into chunks and dice strawberries into bite sized pieces.
5. Fold in chocolate chunks and strawberries gently, taking care not to mash up the berries.
6. Using a cookie scoop or two small spoons scoop dough onto cookie sheet and bake for 12-14 minutes; until edges are golden brown. Let stand on cookie sheet for a couple of minutes to firm up and then move to cooling rack.
We found that they only lasted 4 days before the berries made the cookies mushy; so feel free to eat a few at a time! After all, they do have fruit in them.
