Do Si Do Cheesecake Brownies
I love Girl Scout cookies! That said there are some flavors I love more than others. Apparently my boys feel the same way because we were given a box of Do Si Do cookies and they sat in our cabinet for a week.... and no one had opened them!
I couldn't believe it; and not wanting to eat the whole box myself I started rooting trough the pantry to see what I could make using our box of Girl Scout cookies as one of the main ingredients.

One of the first things my husband asked was if I had written down the recipe so I could make them again soon. We all loved them that much!
Ingredients:
For the brownies:
Box of brownie mix (we used the family size for a 13 x 9 pan)
All the ingredients called for on the brownie mix box
1 1/2 cup semi sweet chocolate chips; divided
For the peanut butter cream cheese layer:
1 8 oz package cream cheese
1 cup powdered sugar
1 box Do Si Do cookies (though Nutter Butter cookies would work too)
1 tsp. vanilla extract
For the ganache:
2 Tbsp butter
1/4 cup milk
The rest of the semi- sweet morsels
1 heaping tablespoon of peanut butter
For the brownies:
Step 1: In a bowl mix up the brownie mix with all the ingredients called for on the box. Pour them into a 13 x 9 pan sprayed with non stick cooking spray. Sprinkle with 1/2 cup semi sweet chocolate chips and bake according to package directions.
For the peanut butter cheesecake:
Step 2: Meanwhile in a food processor crumble up all the cookies.
Step 3: Transfer cookie crumbs to the stand mixer bowl and combine with cream cheese, powdered sugar, and vanilla extract.
For the ganache:
Step 4: In a small saucepan over low heat combine 1 cup semi sweet chocolate chips, 2 Tbsp butter, and 1/4 cup milk, stirring constantly, until melted and smooth. Add in a heaping tablespoon of peanut butter and stir until well blended and smooth.
Assembly:
Step 5: Once the brownies are cooked and cooled add dollops of the cream cheese mixture and then spread in a nice thin layer.
Step 6: Pour ganache over cream cheese mixture and refrigerate until hardened; about an hour.
