Peppermint Oreo Cookies
We had a lot of leftover sugar cookie batter and I wasn't sure what we were going to do with it. We had already made our annual painted holiday cookies and we had made our cinnamon bun cookies.
We were making our Oreo bark and I realized I had a lot of leftover crushed Oreo cookie bits and crushed candy canes. I decided to try mixing them into the sugar cookie batter and baking up a batch of peppermint Oreo cookies.

The holiday Oreos added a festive red tint to the cookies and even though I am not a huge fan of sugar cookies I LOVED these cookies.
The dough we had left was for rolled sugar cookies so I let it sit at room temperature for a bit to soften it up.
Ingredients:
- I had enough dough to make 2 1/2 dozen cookies.
- We added 1/3 cup crumbled holiday Oreo cookies (they taste just like original cookies but they have the festive red frosting inside).
- We also crushed a candy cane to add to the mix.
I scooped out cookie ball and flattened them with the bottom of a drinking glass.
I let them cool for a few minutes before moving them to the cooling rack. As they cool they deflate a bit.
We were so anxious to try them that we ate them while they were still a bit warm. They were so good!

DeleteWow! You made so many cookies. We usually bake a lot too but this year not so much. I love how yummy your cookies came out. I just seen a recipe for Oreo peppermint bark that I want to try. Your boys are cuties. I have 5 boys that keep me on my feet so I know how fun they are. ;)

DeleteWhat a brilliant idea with the leftover sugar cookie dough! And they look so festive. Oh how I miss baking with our three boys. I thought maybe the two oldest would come home from college and want to help mom but they just want to eat the goodies. That's ok, I'll keep making their favorites.
