Blueberry White Chocolate Chip Cookies

We recently had some friends over and I was thinking... "Hm... there's some new dessert I made last time that we just loved... what was it?"   It took me a few days but I finally remembered that I had tried making some blueberry cookies with white chocolate chips-- and we just LOVED them!



We always pick a lot of blueberries in the summer because we have so many bushes near us.  I am often looking for new recipes to try out to use up those leftover blueberries.

We also freeze a lot of blueberries each year.  I usually end up with a good 2 -3 gallon size freezer bags of blueberries and by this time of the year I'm trying to make sure they're all used up so we can make room for the new ones we'll be picking.

I have one whole bag of blueberries left so we'll be making a lot of blueberry recipes over the next few weeks.

I had only made these cookies using fresh berries but figured as long as I did not thaw the frozen blueberries out that I should be OK to substitute frozen blueberries for the fresh.



It worked perfectly with just a few small modifications.

Ingredients:
  • 1 cup butter or margarine; softened
  • 1 cup sugar
  • 3/4 cups brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 3 cups flour + 2 Tablespoons for coating blueberries 
  • 1 tsp baking soda
  • 1 tsp salt
  • 12 oz. package of white chocolate chips
  • 1 1/2 cups blueberries; frozen (NOT thawed)
1. Preheat oven to 350.
2. In stand mixer beat butter and both sugars on medium speed until nice and fluffy.  Add in eggs and vanilla.  Beat until combined. 
3.  In a separate bowl combine flour, baking soda, and salt.  Then add to wet ingredients using low setting on stand mixer.  
4.  Fold in chocolate chips.  
5.  Toss frozen blueberries with 2 Tbsp of addition flour to coat blueberries then gently fold into the cookie batter taking care not to mash up the blueberries. 
6.  Using a cookie scoop or two small spoons scoop dough onto cookie sheet and bake for 12-14 minutes; until edges are golden brown.  Let stand on cookie sheet for a couple of minutes to firm up and then move to cooling rack. 





Yum! A simple taste of summer.

    1. It was not ever something I thought to put together either but I just LOVED them once I tried them. Plus the crunchy chips next to the super soft blueberries was a great texture too.
